Veggie Cubes
Preparation time: 10 minutes
You will need:
A selection of leftover vegetables such as carrot, broccoli stalks, cabbage stalks, sweet potato, squash or pumpkin
A splash of pressed Olive oil
Water
You can also add: a pinch of cayenne or black pepper and turmeric
Method:
1. Peel and chop the vegetables. Place the ingredients in a large saucepan and cover with water and cook over a low heat for about 30 minutes
2. Remove from heat and leave to cool.
3. Strain the mix and pour into an ice cube tray and freeze.
For easy storage remove the frozen Veggie cubes and store in a freezer bag. Be sure to clearly label the bag with the date.
Can be kept frozen for up to 3 months.
